I let the dough rest, then I roll it out and cut it with my old school hand crank pasta machine. I always ended up with tasty pasta, but sometimes it was too soft and stretch out while drying, and other times it was a little stiff and slightly annoying to roll out.
So, I decided to test recipes. After reading a few similar ones, I settled on this simple one, which inspired me to try a different mixing method as well.
Simple Egg Pasta
4 cups all purpose flour
1 tablespoon salt
4 eggs
1 tablespoon olive oil
First, put the flour in a mound on a wooden rolling/kneading board. Make a depression in the center, and crack the eggs into it. Add the salt, olive oil and salt.
With a fork, whisk the eggs and begin incorporating them into the flour. Below is a video of my attempt at this step, and the mess I made of it.
I cleaned up the mess, and added some more water to make up for the liquid I lost in the accident.
Once ingredients are combined, divide into four sections and let the dough rest at least twenty minutes.
Roll sections through pasta machine or by hand on a floured surface, and cut noodles.
My pre-schooler loves rolling and cutting pasta! She helps every time I make pasta or any other dough.
These are great cooked fresh and after they've dried!
My family ate these spaghetti noodles with fresh sauce made from our home-canned tomatoes. Plus loads of basil and parmesan cheese.
